Sweet onions baked with cheddar and mozzarella under a buttery Ritz cracker topping. This Southern onion casserole is creamy, cheesy, and may cause people to reconsider their entire position on onions.
0 Grease a 13x9 inch pan.
1 Preheat the oven to 375F.
2 Place onions in a saucepan and cover with water.
3 Bring to a boil and simmer until tender - about 6-8 minutes.
4 Drain and put back in the pan.
5 Stir in butter.
6 In a large mixing bowl whisk the eggs and evaporated milk together until combined. Add the onion and butter mixture.
7 Stir in the Ritz cracker crumbs, grated cheddar cheese, grated Mozzarella, salt, and pepper.
8 Add to prepared 13x9-inch pan.
9 Combine topping ingredients in a small mixing bowl and sprinkle on top of the mixture in the prepared pan.
10 Bake for 40-45 minutes, or until heated through. It will register 165F on an instant read thermometer.
