Tomato cake is a Depression-era recipe from the family recipe box. Made with tomato juice, spices, and a little butter this simple loaf tastes similar to a spice cake. The acids in the tomato juice and slow baking make it super moist.
10 Spray a 9x5-inch loaf pan with no stick baking spray. Set aside.
0 Cream butter and sugar.
3 Mix flour, baking powder and spices.
1 Add baking soda to tomato juice.
4 Add 1/3 of the flour mixture to the creamed butter and sugar.
2 Mix well on low speed.
7 Add 1/2 of the tomato juice mixture, mixing well.
8 Repeat the steps, alternating the flour and tomato juice, and ending with the flour.
9 Spoon into the prepared loaf pan.
5 Bake at 300℉ for 40-45 minutes in a greased loaf pan, or until the center registers about 200°F on an instant-read thermometer.
6 Cool and dust with confectioner's sugar.
