This biscuits and gravy pot pie layers rich sausage gravy, smoky sausage, and tender biscuits into one bubbling skillet of pure comfort. Easy enough for a weekend breakfast and hearty enough to call dinner without apologizing for it.
0 Preheat the oven to 400 degrees F.
Gravy
6 Add breakfast sausage and onion to a cast iron skillet and cook, crumbling with a wooden spoon, until browned, about 5 minutes.
7 Stir in the smoked sausage.
8 Sprinkle flour evenly over sausage mixture and cook, stirring constantly for 2 minutes.
9 Add milk and pepper. Cook, stirring constantly until well blended.
10 Bring mixture to a simmer and cook until thickened, about 5 minutes.
11 Turn off heat and let sit while you make the biscuits.
Biscuits
2 Add the flour to a large bowl.
3 Using the big holed side of a grater, grate the butter into the flour and stir to make sure the butter isn't in just one spot.
4 Pour in ⅔ of the buttermilk and stir lightly with a fork - just until the dough leaves the sides of the bowl. You may need a little more buttermilk.
Assemble
13 Scoop the drop biscuit mixture by 1/4 cup scoops on top of the hot gravy.
14 Bake in the preheated oven until biscuits are golden brown and cooked through, 20-25 minutes.
