Full of flavor, color, and crunchy texture! Tuna tacos , made with Bumble Bee® Albacore, are a quick and easy dinner that are on the table in less than 10 minutes. You've probably got most of the ingredients on hand!
1 Drain the Bumble Bee® Solid White Albacore and place in a bowl.
2 Cut one of the limes in half and squeeze both halves over the tuna. Set the other 2 limes aside.
3 Add 2 tablespoons of the chopped, fresh cilantro and stir gently to mix.
4 Set aside.
5 Cut the cabbage into thin shreds with a sharp knife.
6 Separate the shreds.
7 Chop the onion.
8 Set the cabbage and onion aside.
9 Warm the tortillas wrapped in a damp paper towel in the microwave for about 1 minute.
10 Place two hot tortillas on a plate, keeping the rest of the tortillas covered so they stay warm.
11 Spoon a tablespoon of cream on each tortilla and spread gently to cover the bottom.
12 Add some of the cabbage, then some of the onions.
13 Place some of the tuna mixture on the top.
14 Sprinkle with some of the Cojita cheese, cilantro, and pumpkin seeds.
15 Drizzle salsa verde over all and add a few pumpkin seeds.
16 Dust lightly with the smoked paprika.
17 Repeat with remaining tortillas.
Cumin Cream
1 Mix the sour cream (or yogurt) and cumin.
2 Add salt and pepper to taste.
3 Stir in enough water to thin the cream out to the consistency of a creamy salad dressing.
