Old Fashioned Lemon Snaps Cookies (Lemon Crinkle Cookies)

0 Preheat oven to 375F.
1 Cream butter and sugar together until fluffy.
2 Beat in the eggs.
3 Add the lemon juice, zest, and extract.
4 Mix the dry ingredients and stir in until well blended.
5 Roll dough between your hands to form walnut sized balls.
6 Roll in lemonade mix or sugar and place on cookie sheet that is covered with silpat.
9 Chill for 30 minutes.
7 Put into the preheated oven and bake for 10 minutes.
8 Remove from oven - gently press down tops while cookies are warm if they are puffy.
