Ingredients: 1 pound bacon; 1 cup green onions; 1 cup celery; 1 cup cashews; 16 ounces packages frozen peas; 8 ounces water chestnuts; 2/3 cup sour cream; 1/3 cup mayonnaise; 2 tablespoons Ranch dressing mix

This vintage pea salad recipe is crunchy with cashews and water chestnuts in a creamy dressing. It's quick and easy to put together and is one of my favorites for potlucks and summer parties.

Instructions

Dressing
1 Stir together the sour cream, mayonnaise, and Ranch dressing mix.
2 Add salt and pepper to taste.
3 Set aside.
Salad
5 Mix all ingredients except the bacon in a large serving bowl.
6 Top with the dressing and mix well.
7 Cover with plastic wrap.
8 Chill 24 hours.
9 Stir in bacon just before serving.
