Southern Collard Greens with Bacon
15 mins prepServes 8
Some things in life should be hard—like deciding what to watch next on Netflix. But making tender, smoky, Southern collard greens? That should be easy. And thanks to this slow cooker recipe, it is.
To Clean:
19 It's easiest if you can find pre-washed greens but if you can't then follow the instructions below to clean all the grit out of them.
1 Fill the sink or a dishpan with barely warm water. I prefer to use a dishpan.
2 Push the collard greens under the water and move them around.
3 Wash the greens, scrubbing between your hands.
4 Let the water out of the sink or pour it out of the dishpan.
5 Rinse under running water.
6 Repeat this process until there is no sign of sand or grit in the sink.
To cook:
8 Fry the bacon until it is crisp. Remove from the pan, reserving 2 tablespoons of drippings, and crumble it.
23 Put in a ziploc bag or storage container, seal or cover, and refrigerate.
10 Spray the slow cooker with no-stick cooking spray.
11 Remove the leaves from the thick center stalks of the collards.
12 Cut or tear into large pieces. 2 to 3 inches is about right.
20 Add to the slow cooker.
13 Add the chopped onion and minced garlic.
15 Pour the chicken stock into a large mixing bowl and add the crushed red pepper, reserved bacon drippings, and vinegar.
21 Whisk to mix and pour the mixture over the greens in the slow cooker.
16 Cook on low for 10 hours or until greens are tender.
17 Add salt and black pepper to taste.
22 Give the bacon a few seconds in the microwave just to warm it up.
18 Serve collard greens with crumbled bacon on top.
