Sweet Potato Chicken Pot Pie Casserole

There's not an easier casserole than this 30 minute chicken pot pie with a sweet potato topping. Since it's crustless it goes together fast and you can make it ahead of time. Be sure to read the time-saving tips.
0 Preheat oven to 350°F
Filling
2 Whisk the soup and ½ cup evaporated milk together until smooth.
3 Mix the chicken and vegetables in a large bowl.
4 Pour the soup mixture over the chicken mixture and stir to blend.
5 Set aside.
Topping
7 Add the sweet potatoes, butter, and evaporated milk to a large bowl.
8 Mix with an electric mixer until smooth and fluffy.
9 Add salt and pepper to taste.
Assemble
11 Spray casserole dish with no-stick cooking spray.
12 Add filling to casserole dish.
13 Top with sweet potatoes.
14 Bake for 20-30 minutes or until heated through.
15 Top with chopped parsley and serve.
