BBQ Macaroni Salad with Smoky-Sweet Dressing
10 mins prepServes 10
Creamy, smoky, sweet, and just a little tangy, this BBQ macaroni salad is the make-ahead cookout side dish people quietly go back for seconds of. Even better? It tastes best after a night in the fridge. One reader won a recipe contest with it!
0 Cook the macaroni in a large pot of water with a little salt until tender.
1 Drain pasta and set aside.
2 Mix the mayonnaise, both BBQ sauces, vinegar, cumin, smoked paprika, and sugar.
3 Set aside.
4 If you happen to be grilling add the corn kernels to a mesh grill roasting pan and grill until some of the kernels start to brown. If you're not, don't worry about it.
5 Drain the corn and beans if they are canned.
6 Add the corn, black beans, onion, bell peppers, celery, and poblano if you're using it, to the macaroni in a large bowl.
7 Spoon the mayonnaise mixture over the top.
8 Gently stir and fold until the mayonnaise mixture covers everything.
9 Cover and chill overnight for the best flavor.
10 Stir in bacon just before serving so it stays crispy.
